"So my honesty will answer for me later, when you come to look into my wages with you. Every one that is not speckled and spotted among the goats and black among the lambs, if found with me, shall be counted stolen." Jacob explicitly builds a theft-prevention clause into the agreement: any normal-colored animal in his flock would be evidence of theft. The arrangement is self-policing because the ownership criterion (color) is visible and unambiguous. No normal animal can be concealed in Jacob's flock without being immediately recognizable as Laban's.

"My honesty will answer for me" reflects Jacob's confidence in the arrangement's fairness as structured. He is not proposing a hidden advantage; the visible coloring criterion is transparent. What Jacob does not disclose is his selective breeding strategy, which is not theft but expertise: he will use management techniques to increase the proportion of abnormally colored offspring.
